Eat Burgoo Like The Natives Do

While bourbon is the drink of choice for many people in Kentucky, the Bourbon Mash-Up blog wants you to know there are many more tongue teasing treats to please your pallet. When visiting the horse track or traveling around the state at a bourbon festival, you might find a nice burgoo to taste. A small bowl of burgoo is sure fill your belly while taking a pause between trips to the betting window and the bar at Keeneland.

Burgoo is a slow cooked thick multi-meat stew served in the bluegrass state. Most likely, it’s French cuisine that found it’s way into the state during the Civil War with Morgan’s Raiders. Burgoo is essentially the meatlover’s pizza of stews. Oh sure, there are vegetables, but they are not the star of the show.

Cooked in large batches with the goal of feeding large amounts of people and basically should include any meats and vegetables you can get your hands on, including pork, veal, beef, lamb, chicken, deer, squirrel, and rabbit. One should then throw in massive amounts of vegetables like potatoes, carrots, corn, onions, tomatoes, cabbage, green beans, okra, and the right amount of seasoning, especially of the spicy variety. This should cook low and slow and the end result is a juicy meaty stew that confuses your senses upon each bite due to the wide variety of ingredients.

For a classic meal like burgoo, one might reach out for a nice glass of Maker’s Mark or Woodford Reserve to compliment the rich flavors in burgoo. My recommendation is to start doing research on a recipe that might fit your needs and start perfecting your burgoo before surprising your friends at this year’s Kentucky Derby party.  Save some room though for the Derby Pie.
